  • 2 cups digestive cookies or graham crackers
  • ½ cup butter (melted)
  • 3 cups fresh apple cider
  • 3 bricks of cream cheese (softened)
  • 1 cup brown sugar
  • 1 cup sour cream
  • 3 large eggs
  • Mulling spices

Instructions

  1. Boil fresh apple cider with mulling spices in a large pot for about an hour until reduced to ⅓ cup. Allow to cool.
  2. Preheat oven to 350°F. Prepare crust by grinding cookies in a food processor, mixing with melted butter, salt, and powdered sugar. Press into an 8-inch springform pan and bake for 10 minutes.
  3. Lower oven temperature to 325°F. In a stand mixer, beat cream cheese with brown sugar until smooth. Mix in sour cream, vanilla, salt, cinnamon, and the reduced cider. Add eggs and flour until combined.
  4. Pour filling into cooled crust and bake for about 90 minutes until edges are set but center is slightly wobbly.
  5. Cool slowly in the oven with the door ajar for 30 minutes before refrigerating for at least 8 hours before serving.
