Ingredients
- 1–½ cups fresh apple cider
- 4 tablespoons cold unsalted butter
- 2 large eggs
- 1/3 cup granulated sugar
- ½ cup brown sugar
- 1/3 cup light olive oil
- ¼ cup sour cream
- 1–½ teaspoons baking powder
- 1–½ teaspoons ground cinnamon
- 1–¾ cups all-purpose flour
Instructions
- Preheat oven to 350°F. Grease a 9” square baking dish and line with parchment paper.
- In a large sauté pan, boil apple cider until reduced by half (about 5 minutes), then whisk in diced butter until melted.
- In a medium bowl, combine eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, cinnamon, and salt.
- Gradually whisk in the reduced cider mixture until smooth.
- Fold in flour until just combined.
- Pour batter into prepared dish and bake for 22–25 minutes or until golden brown.
- Cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
