  • 1½ cups fresh apple cider
  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1½ teaspoons baking powder
  • 1½ teaspoons ground cinnamon
  • 1¾ cups all-purpose flour

Instructions

  1. Preheat oven to 350°F. Grease a 9” square baking dish and line with parchment paper.
  2. In a large sauté pan, boil apple cider until reduced by half (about 5 minutes), then whisk in diced butter until melted.
  3. In a medium bowl, combine eggs, granulated sugar, brown sugar, olive oil, sour cream, baking powder, cinnamon, and salt.
  4. Gradually whisk in the reduced cider mixture until smooth.
  5. Fold in flour until just combined.
  6. Pour batter into prepared dish and bake for 22–25 minutes or until golden brown.
  7. Cool slightly before brushing melted butter on top and sprinkling with cinnamon sugar.
