- 1/2 cup sour cream (room temperature)
- 3 large eggs (room temperature)

Instructions
- Preheat your oven to 350F (180C).
- Prepare a 9-inch springform pan by wrapping it in foil and greasing it lightly.
- Mix graham crumbs, brown sugar, cinnamon, and melted butter for the crust; press into the bottom of the pan.
- In a mixing bowl, combine cream cheese, granulated sugar, brown sugar, cinnamon, cornstarch, vanilla extract, sour cream, and eggs; blend until smooth.
- Dice apples and toss them with brown sugar and cinnamon; layer on top of the cheesecake filling.
