  • 1/2 cup quick oats
  • 1/4 cup unsalted butter (melted)
  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat your oven to 350F (180C).
  2. Prepare a 9-inch springform pan by wrapping it in foil and greasing it lightly.
  3. Mix graham crumbs, brown sugar, cinnamon, and melted butter for the crust; press into the bottom of the pan.
  4. In a mixing bowl, combine cream cheese, granulated sugar, brown sugar, cinnamon, cornstarch, vanilla extract, sour cream, and eggs; blend until smooth.
  5. Dice apples and toss them with brown sugar and cinnamon; layer on top of the cheesecake filling.
  6. Prepare crumble topping using flour, brown sugar, oats, cinnamon, and melted butter; sprinkle over the apple layer.
  7. Bake in a water bath for about 60 minutes or until set; cool gradually in the oven before chilling in the refrigerator overnight.
