Description

Ingredients

  • 3 boneless skinless chicken breasts
  • 16 oz potato gnocchi
  • 5 tbsp unsalted butter
  • ½ cup half-and-half
  • ½ cup Asiago cheese
  • 2 cups fresh baby spinach

Instructions

  1. Season chicken breasts with salt and pepper. In a large non-stick skillet over medium heat, melt 2 tablespoons of butter and cook chicken for 8-10 minutes until it reaches 165°F. Transfer to a plate.
  2. In the same skillet, melt the remaining butter, add diced shallot, and cook until softened. Stir in minced garlic.
  3. Sprinkle flour over the mixture; whisk to combine. Gradually add chicken broth while whisking until thickened.
  4. Add half-and-half and uncooked gnocchi; stir well. Cook for 5-7 minutes until gnocchi is tender.
  5. Stir in spinach and grated Asiago until melted. Top with cooked chicken and garnish with parsley before serving.
