- 5 tbsp unsalted butter
- ½ cup half-and-half
- ½ cup Asiago cheese
- 2 cups fresh baby spinach

- Season chicken breasts with salt and pepper. In a large non-stick skillet over medium heat, melt 2 tablespoons of butter and cook chicken for 8-10 minutes until it reaches 165°F. Transfer to a plate.
- In the same skillet, melt the remaining butter, add diced shallot, and cook until softened. Stir in minced garlic.
- Sprinkle flour over the mixture; whisk to combine. Gradually add chicken broth while whisking until thickened.
- Add half-and-half and uncooked gnocchi; stir well. Cook for 5-7 minutes until gnocchi is tender.
- Stir in spinach and grated Asiago until melted. Top with cooked chicken and garnish with parsley before serving.
