  • 1/2 cup unsalted butter (112 grams) (cut into cubes)
  • 2 oz dark chocolate (57 grams) (melted (50%-70%, do not use bittersweet))
  • 2/3 cup brown sugar (133 grams) (packed)
  • 1/3 cup granulated sugar (66 grams)
  • 1 large egg
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 cups chocolate chips (270 grams) (I used dark)

Instructions

  1. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and sea salt.
  2. In another bowl, beat the butter, brown sugar, and granulated sugar until smooth.
  3. Mix in melted dark chocolate until well combined.
  4. Add the egg and vanilla extract; mix until incorporated.
  5. Gradually combine the dry ingredients into the wet mixture on low speed.
  6. Stir in 1 1/4 cups of chocolate chips.
  7. Chill the dough for at least 3 hours (or up to 48 hours).
  8. Preheat oven to 350°F (180°C). Line cookie sheets with parchment paper.
  9. Form balls of dough (about 3–4 tablespoons each) and space them on the sheets.
  10. Bake for 12–14 minutes until tops are just set. Cool before serving.
