Ingredients

  • 1/2 cup unsalted butter (softened)
  • 1 cup packed brown sugar
  • 1 large egg (room temperature)
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt
  • 1 cup all-purpose flour
  • 1 cup mashed overripe bananas (about 2 large)
  • 3/4 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F and line an 8×8 baking pan with parchment paper.
  2. In a mixing bowl, cream together softened butter and brown sugar until light and fluffy.
  3. Mix in the egg, vanilla extract, and salt until well combined.
  4. Gently fold in the flour until just incorporated.
  5. Carefully add the mashed bananas and about 3/4 of the chocolate chips into the batter.
  6. Pour the mixture into the baking pan and sprinkle remaining chocolate chips on top.
  7. Bake for 33-37 minutes or until edges are golden brown and center is set.
  8. Allow to cool completely before slicing into squares.
