Ingredients
- 2.5 kg / 5 lb standing rib roast (bone-in)
- 150g unsalted butter (softened)
- 5 garlic cloves (minced)
- Fresh thyme and rosemary sprigs
- 2 tsp salt
- 1 tsp black pepper
- 1.5 cups low-sodium beef broth
- 2.5 cups dry red wine
Instructions
- Preheat oven to 325°F (160°C).
- Bring the roast to room temperature and pat dry.
- In a bowl, mix softened butter, minced garlic, chopped herbs, salt, and pepper.
- Rub herb mixture over the roast; place quartered onion and halved garlic in the roasting pan.
- Add fresh herbs on top of vegetables; place the roast above.
- Pour beef broth and red wine around the roast.
- Insert a meat thermometer and roast until desired doneness (120°F for rare to 135°F for medium rare).
- Rest covered with foil for at least 20 minutes before slicing.
