  • 2.5 kg / 5 lb standing rib roast (bone-in)
  • 150g unsalted butter (softened)
  • 5 garlic cloves (minced)
  • Fresh thyme and rosemary sprigs
  • 2 tsp salt
  • 1 tsp black pepper
  • 1.5 cups low-sodium beef broth
  • 2.5 cups dry red wine

Instructions

  1. Preheat oven to 325°F (160°C).
  2. Bring the roast to room temperature and pat dry.
  3. In a bowl, mix softened butter, minced garlic, chopped herbs, salt, and pepper.
  4. Rub herb mixture over the roast; place quartered onion and halved garlic in the roasting pan.
  5. Add fresh herbs on top of vegetables; place the roast above.
  6. Pour beef broth and red wine around the roast.
  7. Insert a meat thermometer and roast until desired doneness (120°F for rare to 135°F for medium rare).
  8. Rest covered with foil for at least 20 minutes before slicing.
