- 3 oz cooking oil
- 2 large eggs
- 1 cup sugar
- 1 tsp vanilla extract
- 1 cup pumpkin puree
- 1 1/4 cups chocolate chips (divided)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
- In a large bowl, mix oil, eggs, sugar, vanilla extract, and pumpkin puree until well combined. Stir in one cup of chocolate chips.
- Gradually add dry ingredients to the wet mixture and stir until just blended.
- Prepare an 8" x 4" loaf pan with oil spray. Pour in the batter and top with remaining chocolate chips.
- Bake for 50–60 minutes or until a toothpick inserted into the center comes out clean.
