  • 1 large egg yolk (room temperature)
  • 2 teaspoons vanilla extract

Instructions

  1. Preheat your oven to 375°F and prepare a muffin pan with paper baking cups.
  2. In a medium bowl, whisk together flour, pumpkin spice, baking soda, and salt. Set aside.
  3. In a large bowl, mix pumpkin puree, granulated sugar, and brown sugar until smooth. Add eggs, oil (or butter), and vanilla; blend well.
  4. Gradually add the dry ingredients to the wet mixture until just combined. Fill muffin tins about 3/4 full with batter.
  5. In another bowl, beat cream cheese until smooth; mix in sugar, egg yolk, and vanilla until combined.
  6. Top each muffin with a tablespoon of cream cheese mixture and swirl gently using a toothpick.
