Ingredients

  • 200 g unsalted butter (softened)
  • 200 g light brown soft sugar
  • 4 large eggs
  • 100 g smooth Biscoff spread
  • 200 g self-raising flour
  • 125 g unsalted butter (for frosting)
  • 250 g icing sugar
  • 165 g smooth Biscoff spread (for frosting)
  • 12 tbsp milk
  • 9 Lotus Biscoff biscuits (for decoration)

Instructions

  1. Preheat the oven to 160C Fan/180C/350F/Gas Mark 4. Grease and line a 2lb loaf tin.
  2. In a mixing bowl, combine softened butter, Biscoff spread, and light brown sugar. Mix until light and fluffy.
  3. Add eggs one at a time until fully incorporated.
  4. Gradually fold in self-raising flour until just combined.
  5. Pour the batter into the prepared loaf tin and bake for about 75 minutes or until a skewer comes out clean. Cool in the tin before transferring to a wire rack.
  6. For the frosting, beat together the softened butter and icing sugar, add Biscoff spread and milk until smooth.
  7. Frost the cooled loaf cake and top with crushed Lotus biscuits.
