Ingredients

  • 1/2 pound ground breakfast sausage
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter, divided
  • 8 slices sourdough bread

Instructions

  1. In a non-stick skillet, cook and crumble the breakfast sausage until fully cooked. Transfer to a bowl lined with paper towels.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour in the beaten eggs and scramble until just set. Remove from heat.
  3. Combine the cooked sausage with the scrambled eggs in a bowl.
  4. Butter one side of each slice of sourdough bread. Place one slice butter-side down in the skillet, add a slice of cheese, then half a cup of the sausage-egg mixture, another slice of cheese, and top with another slice of buttered bread (butter-side up).
  5. Cook until golden brown on both sides, about 3-4 minutes per side.
  6. Repeat with remaining ingredients and serve immediately.
