- 1/2 pound ground breakfast sausage
- 6 large eggs, beaten
- 8 slices Colby-Jack cheese
- 4 tablespoons soft butter, divided
- 8 slices sourdough bread
Instructions
- In a non-stick skillet, cook and crumble the breakfast sausage until fully cooked. Transfer to a bowl lined with paper towels.
- In the same skillet, melt 2 tablespoons of butter over medium-high heat. Pour in the beaten eggs and scramble until just set. Remove from heat.
- Combine the cooked sausage with the scrambled eggs in a bowl.
- Butter one side of each slice of sourdough bread. Place one slice butter-side down in the skillet, add a slice of cheese, then half a cup of the sausage-egg mixture, another slice of cheese, and top with another slice of buttered bread (butter-side up).
- Cook until golden brown on both sides, about 3-4 minutes per side.
