Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tablespoons vegetable oil
- 1 medium onion
- 3 garlic cloves
- 1 red bell pepper
- 1 green bell pepper
- 1 Scotch bonnet pepper
- 1½ cups long-grain white rice
- 1½ cups chicken broth
- 1 cup coconut milk
Instructions
- Season chicken with salt, black pepper, paprika, allspice, garlic powder, and onion powder.
- In a large pot over medium-high heat, brown chicken on both sides in vegetable oil; remove and set aside.
- Sauté onion, garlic, red and green bell peppers in the same pot until softened.
- Add Scotch bonnet pepper and spices; stir well.
