Ingredients
- 1/2 cup melted butter
- 1 cup light brown sugar
- 1 large egg
- 1 tablespoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup shredded carrots
- 4 ounces cream cheese (room temperature)
- 1/4 cup granulated sugar
- 1 large egg yolk
Instructions
- Preheat your oven to 350°F and prepare an 8×8 baking pan with non-stick spray.
- In a mixing bowl, whisk together melted butter and brown sugar until smooth. Add the egg and vanilla extract; mix well.
