Ingredients

  • 1/2 cup certified gluten-free oats
  • 1/2 cup almond milk
  • 1 tsp chia seeds
  • 1/2 scoop vanilla protein powder
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 2 tbsp shredded carrots
  • 1 tbsp chopped pecans
  • 1 tbsp raisins
  • 1/3 cup Greek yogurt
  • 2 tbsp white chocolate chips
  • 1.5 tbsp cream cheese

Instructions

  1. In a bowl or jar, combine all oat ingredients and stir until fully mixed. Refrigerate for at least one hour.
  2. In a microwave-safe bowl, melt the white chocolate chips. Mix with Greek yogurt and cream cheese using a whisk until smooth.
  3. Pour the cream cheese ganache over the refrigerated oats. Return to the fridge overnight.
  4. Serve chilled in the morning with extra shredded carrots and pecan pieces.
