  • ½ tsp baking soda

  • ½ tsp ground cinnamon
  • 3 large eggs
  • ¾ cup granulated sugar
  • 2 Tbsp oil (canola/vegetable)
  • 2 cups shredded carrots
  • 8 oz cream cheese
  • 8 Tbsp butter
  • 1 cup powdered sugar

Instructions

  1. Preheat oven to 375°F and line a jelly roll pan with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, salt, and spices; set aside.
  3. In another bowl, beat eggs and sugar until combined; add oil and vanilla.
  4. Fold dry ingredients into the wet mixture followed by shredded carrots.
  5. Spread batter evenly in the prepared pan and bake for 10–13 minutes.
  6. Roll the warm cake with parchment paper; cool for about 10 minutes.
  7. Prepare frosting by beating cream cheese and butter; gradually add powdered sugar and vanilla.
  8. Unroll the cooled cake, spread frosting, then re-roll tightly.
  9. Chill for at least one hour before slicing.
