Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2¼ cups beef broth
  • 1 (10 oz) can Rotel diced tomatoes
  • 2 tablespoons tomato paste
  • 1½ cups long-grain white rice (dry)
  • 2 cups shredded cheese (any variety)

Instructions

  1. In a large skillet over medium-high heat, heat olive oil. Add ground beef and onion; cook until the beef is no longer pink and onions are translucent, about 8-10 minutes. Drain excess grease.
  2. Stir in minced garlic and taco seasoning; cook for another 30 seconds until fragrant.
  3. Add beef broth, Rotel, and tomato paste; bring to a boil. Stir in the dry rice and return to a boil.
  4. Cover and reduce heat to low; simmer for about 15 minutes until rice is tender and has absorbed most liquid.
  5. Sprinkle cheese over the mix; cook for another 5 minutes until melted. Serve warm with toppings like sour cream or guacamole.
