  • 1 lb potato gnocchi
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup parmesan cheese
  • 2 Tablespoons olive oil (divided)
  • 1 teaspoon garlic powder
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 4 Tablespoons unsalted butter (divided)
  • 2 shallots (thinly sliced)
  • 3 cloves garlic (minced)
  • 3 Tablespoons flour (gluten-free if needed)
  • 1/2 cup chicken broth

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Season chicken with olive oil, garlic powder, Italian seasoning, salt, and pepper. Cook in a large oven-safe skillet over medium-high heat for about 8-10 minutes until golden brown.
  3. In the same skillet, sauté shallots and minced garlic in butter until soft. Stir in flour to form a roux.
  4. Gradually whisk in chicken broth, milk, and heavy cream until thickened.
  5. Dice cooked chicken and add along with uncooked gnocchi to the sauce. Mix in mozzarella and parmesan.
  6. Bake for 12-15 minutes until the cheese is bubbly and golden.
