Ingredients
- 2 tablespoons olive oil
- 1 lb boneless, skinless chicken breasts
- 1 cup diced celery
- 1 cup sliced carrots
- 1 cup finely chopped onion
- 1/2 tablespoon minced garlic
- 3 cups low-sodium chicken broth
- 2 cups Yukon gold potatoes (peeled and cut)
- Salt and pepper to taste
- Optional: fresh parsley for garnish
Instructions
- Heat olive oil in an Instant Pot or large pot over medium heat. Sauté celery, carrots, and onions until soft (about 5 minutes).
- Stir in minced garlic; cook for another minute.
- Add chicken breasts and seasonings (salt, pepper, parsley).
- Pour in chicken broth and add potatoes; mix well.
- For Instant Pot: Seal lid and cook on high pressure for 15 minutes. For slow cooker: Cook on low for about 6 hours or high for around 3 hours. On stovetop: Bring to boil, then simmer for about 30 minutes.
- Shred cooked chicken and return to pot along with milk; mix thoroughly.
