  • 1/4 cup vegetable oil
  • 3/4 cup buttermilk
  • 2 large eggs
  • 3 large egg whites (for frosting)
  • 1 cup dark brown sugar (for frosting)
  • 2 oz dark chocolate (for ganache)
  • 1/4 cup dulce de leche

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, mix vegetable oil, buttermilk, hot water, eggs, and vanilla until combined.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Divide batter between the prepared pans and bake for about 35 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool before frosting with egg white mixture made from whisking egg whites and brown sugar until stiff peaks form.
  7. Assemble the layers with frosting in between and cover the entire cake with remaining frosting.
  8. Prepare ganache by melting dark chocolate with heavy cream; drizzle over the frosted cake.
