  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 10 oz semi-sweet chocolate (chopped)
  • 16 oz softened cream cheese
  • 2 cups heavy cream (room temperature)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2/3 cup creamy peanut butter
  • 6 oz semi-sweet chocolate (chopped for ganache)
  • 1/4 cup heavy cream (for ganache)

Instructions

  1. Prepare your baking cups or mini springform pans.
  2. Combine graham cracker crumbs and melted butter; press into the bottom of the cups and chill.
  3. Melt chocolate in a microwave-safe bowl; let cool slightly.
  4. In a mixing bowl, beat together cream cheese, powdered sugar, and vanilla until smooth. Add heavy cream and mix until thickened.
  5. Fold melted chocolate into two-thirds of the mixture and spread over the crusts.
  6. Mix remaining filling with peanut butter and layer on top of the chocolate filling.
  7. For the ganache, melt remaining chocolate with heavy cream; drizzle over cheesecakes.
  8. Garnish with mini chocolate chips and chopped peanuts before serving.
