  • 4 egg whites
  • Pinch of cream of tartar
  • 3 tablespoons plus 1 teaspoon granulated sugar (for egg whites)
  • 2 egg yolks
  • ½ teaspoon vanilla extract
  • Powdered sugar (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C) and coat soufflé dishes with cooking spray.
  2. In a large bowl, mix powdered sugar, cocoa powder, and flour.
  3. In another bowl, whisk together low-fat milk and water; combine with dry ingredients until smooth.
  4. Beat egg whites with cream of tartar until soft peaks form; gradually add sugar until stiff peaks form.
  5. Fold one-third of egg whites into the chocolate mixture, then gently fold in the remaining whites.
