Ingredients
- 5 strips bacon
- 3.5 lbs beef chuck
- 4 tbsp unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 cups Burgundy wine
- 2 cups beef stock
- Fresh thyme and bay leaves
- Frozen pearl onions and cremini mushrooms
Instructions
- Preheat your oven to 350°F (175°C).
- In a Dutch oven, cook chopped bacon over medium-low heat until browned; remove and set aside.
- Sear seasoned beef in the same pot until browned on all sides; remove.
- Sauté chopped onions and carrots in butter until tender; add garlic and tomato paste.
- Sprinkle flour and stir well; pour in wine, beef stock, and return meat with herbs.
- Cover and cook in the oven for about 2.5 hours.
- In the last half hour, sauté mushrooms and pearl onions; stir into the pot.
- Cook until beef is very tender (another 45–60 minutes). Let rest before serving.
