  • 3 cups fresh or frozen blueberries
  • 1/2 cup sugar (for streusel topping)
  • 1/3 cup cake flour (for streusel topping)
  • 1/2 tsp cinnamon (for streusel topping)
  • 4 tbsp cold butter (cubed, for streusel topping)

Instructions

  1. Preheat your oven to 375°F and grease a 9×9 baking dish.
  2. In a bowl, whisk together cake flour, baking powder, and salt.
  3. In another bowl, cream together butter and sugar until fluffy; then add egg and vanilla extract.
  4. Gradually mix in the dry ingredients alternately with milk until just combined.
  5. Gently fold in blueberries.
  6. Spread the batter evenly into the prepared pan.
  7. For the streusel topping, mix sugar, flour, and cinnamon; cut in cold butter until crumbly. Sprinkle over the batter.
  8. Bake for 35–40 minutes or until a toothpick comes out clean.
  9. Allow to cool for at least 10 minutes before serving.
