- 2 cups white sugar
- 1 cup light brown sugar
- 1 cup vegetable oil
- 4 eggs, beaten
- 1 (15 oz) can pureed pumpkin
- 2/3 cup water
- 3 1/2 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 2 teaspoons ground cloves
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon ground nutmeg
- 2–4 tablespoons Pepitas (green pumpkin seeds), chopped
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine white sugar, brown sugar, vegetable oil, beaten eggs, and pureed pumpkin. Mix well and gradually add water until smooth.
- In another bowl, whisk together flour, baking soda, salt, ground cloves, pumpkin pie spice, and nutmeg.
- Combine wet and dry ingredients gently; lumps are okay.
- Pour batter into two greased loaf pans and sprinkle with pepitas.
- Bake for about 1 hour or until a toothpick comes out clean. Allow to cool before slicing.
