  • 1 1/2 teaspoons baking powder
  • 2 teaspoons pumpkin spice
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (or regular)
  • 3/4 cup cottage cheese (whole milk works best)
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup applesauce
  • 2 Tablespoons coconut oil (melted and cooled)
  • 2 large eggs
  • 1 1/2 cup all-purpose flour (or gluten-free all-purpose flour)
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (or regular)

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. Blend cottage cheese, maple syrup, vanilla extract, eggs (and pumpkin puree if making the pumpkin version) until smooth.
  3. In a mixing bowl, whisk together flour, baking powder, salt (and pumpkin spice if making the pumpkin version).
  4. Pour the blended mixture into the dry ingredients and fold gently until just combined.
  5. Stir in chocolate chips evenly.
  6. Fill muffin liners three-quarters full and bake for 25–30 minutes until golden brown.
  7. Allow to cool slightly before transferring to a wire rack.
