  • 2 large boneless, skinless chicken breasts
  • 8 oz linguine pasta
  • ½ cup unsalted butter
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • Fresh parsley and thyme
  • Smoked paprika and onion powder

Instructions

  1. Cook the linguine in salted boiling water until al dente. Drain and set aside.
  2. Season chicken breasts with salt, pepper, smoked paprika, and onion powder. In a skillet, melt half the butter over medium-high heat, then cook chicken for 6–7 minutes per side until cooked through. Remove from skillet and let rest before slicing.
  3. In the same skillet, lower heat and add remaining butter and minced garlic; sauté until fragrant. Stir in chicken broth, lemon juice, parsley, thyme, and red pepper flakes (if using). Simmer for about 5 minutes.
  4. Toss cooked linguine in the cowboy butter sauce until well coated. Top with sliced chicken.
  5. Garnish with freshly grated Parmesan cheese before serving.
