  • 12 oz Italian sausage (casings removed)
  • 1 tablespoon olive oil
  • 10 oz potato gnocchi
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup butternut squash puree
  • 3 cloves garlic (minced)
  • 2 tablespoons fresh sage (chopped)
  • 2 tablespoons fresh thyme (chopped)
  • Salt and coarsely ground black pepper (to taste)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned on both sides.
  2. Add potato gnocchi, heavy cream, and chicken broth to the skillet; bring to a boil while stirring.
  3. Cover and simmer for about 5 minutes.
  4. Stir in butternut squash puree and minced garlic; cook on low-medium heat until thickened, about 3 minutes.
  5. Mix in half of the fresh herbs and season with salt and pepper before serving topped with remaining herbs.
