Description

Creamy Miso Udon Soup is a comforting and flavorful dish that brings together the rich umami of miso, the creaminess of dairy, and the satisfying chew of udon noodles.


Ingredients

  • 2 servings udon noodles (vacuum pack)
  • 2 tbsp butter
  • ½ medium onion (sliced)
  • 3 cloves garlic (sliced)
  • 4 shiitake mushrooms
  • 1 tbsp soy sauce
  • 2 tbsp white miso paste
  • ¼ cup heavy cream
  • ¾ cup milk
  • 90 g beef brisket
  • 2 poached eggs

Instructions

  1. Boil udon noodles according to package instructions. Strain and rinse with cold water.
  2. In a frying pan, melt butter over medium heat. Sauté onion, garlic, and shiitake mushrooms until fragrant.
  3. Add water and soy sauce; stir to combine.
  4. Strain the mixture into a bowl, return broth to the saucepan, and mix in miso paste until fully dissolved.
  5. Stir in heavy cream and milk; bring to a gentle boil before adding beef brisket until cooked through.
  6. Serve udon in bowls, pour hot soup over noodles, and garnish with beef brisket, mushrooms, green onion, and dried seaweed.
