- 2 tbsp butter
- ½ medium onion (sliced)
- 3 cloves garlic (sliced)
- 4 shiitake mushrooms
- 1 tbsp soy sauce
- 2 tbsp white miso paste
- ¼ cup heavy cream
- ¾ cup milk
- 90 g beef brisket
- 2 poached eggs
Instructions
- Boil udon noodles according to package instructions. Strain and rinse with cold water.
- In a frying pan, melt butter over medium heat. Sauté onion, garlic, and shiitake mushrooms until fragrant.
- Add water and soy sauce; stir to combine.
- Strain the mixture into a bowl, return broth to the saucepan, and mix in miso paste until fully dissolved.
- Stir in heavy cream and milk; bring to a gentle boil before adding beef brisket until cooked through.
- Serve udon in bowls, pour hot soup over noodles, and garnish with beef brisket, mushrooms, green onion, and dried seaweed.
