- 6–8 cups chicken broth
- 6 oz pasta (small shells recommended)
- 1 cup heavy whipping cream
- 1/2–1 cup grated Parmesan cheese
- 2 1/2–3 cups fresh spinach
Instructions
- In a large soup pot or Dutch oven, heat olive oil over medium-high heat.
- Add diced chicken seasoned with Italian seasoning, salt, and pepper; cook until browned.
- Stir in onions, carrots, celery, sundried tomatoes, and garlic. Sauté until translucent.
- Sprinkle flour over the mixture and stir well. If using tomato paste, add now.
- Gradually whisk in chicken broth while deglazing the pot.
- Bring to a boil; add pasta and another teaspoon of Italian seasoning. Simmer until chicken is cooked and pasta is al dente.
- Stir in heavy cream, spinach, and Parmesan cheese; simmer for an additional 5 minutes.
