  • 3 cups cooked, shredded chicken
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 12 small flour tortillas
  • 4 tbsp unsalted butter
  • 2 cups chicken broth
  • 1 cup sour cream
  • Diced green chilies
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp chili powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine the shredded chicken, cheeses, diced onion, garlic, cumin, chili powder, smoked paprika, salt, and pepper.
  3. In a skillet over medium heat, melt butter and add flour; whisk for about 2 minutes until golden brown. Gradually whisk in chicken broth followed by sour cream and green chilies; cook until heated through.
  4. Spread some sauce in a baking dish. Fill each tortilla with the chicken mixture and roll tightly. Place seam-side down in the dish. Pour remaining sauce over the top and sprinkle with additional cheese.
  5. Bake for about 25 minutes until bubbly and golden brown.
