  • 4 pounds yellow potatoes
  • 2 tablespoons kosher salt
  • 1/2 teaspoon baking soda
  • ¼ cup duck fat (or olive oil)
  • 1 whole head garlic
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon extra-virgin olive oil
  • Flaky sea salt for finishing

Instructions

  1. Preheat your oven to 450°F and place a roasting pan inside.
  2. Rinse potatoes under cold water, then add them to a pot with water, kosher salt, and baking soda. Bring to a boil and cook until fork-tender (about 25 minutes). Drain and let dry.
  3. Remove the hot roasting pan from the oven. Add duck fat to melt, then toss in the drained potatoes along with salt and pepper.
  4. Nestle the garlic head cut-side down into the pan. Roast for 55-60 minutes, tossing every 20 minutes until golden brown.
  5. Remove garlic, squeeze out cloves into a bowl, mix with rosemary and olive oil, then toss back into the potatoes for an additional five minutes.
