- 2 pounds boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 1 can (14 ounces) chicken broth
- 2 cloves garlic, minced
- 1 small onion, chopped
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 12 ounces penne pasta
- Salt and pepper to taste
Instructions
- Place chicken in the crock pot and sprinkle with Cajun seasoning.
- Add chicken broth, garlic, onion, red bell pepper, and green bell pepper.
- Cover and cook on low for 6 hours or high for 3-4 hours until chicken is tender.
- Shred the chicken with two forks and return to the crock pot.
- Stir in heavy cream, Parmesan cheese, and uncooked penne pasta.
- Cover and cook on high for an additional 30 minutes until pasta is tender.
- Season with salt and pepper before serving.
