  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups sweetened shredded coconut
  • 1 1/2 cups chopped pecans
  • 1 can (12 oz) evaporated milk
  • 1 1/2 cups sugar
  • 3/4 cup butter
  • 4 egg yolks
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a large baking sheet.
  2. In a bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. Add buttermilk, vegetable oil, eggs, and vanilla extract. Mix until smooth.
  4. Stir in boiling water gradually until well blended.
  5. Pour batter onto the prepared baking sheet and bake for 20-25 minutes or until a toothpick comes out clean.
  6. While the cake bakes, prepare the frosting by cooking evaporated milk, sugar, butter, egg yolks, and vanilla over medium heat until thickened.
  7. Remove from heat and mix in coconut and pecans.
  8. Let the cake cool slightly before frosting it evenly. Roll it up starting from one end and chill for at least 30 minutes before slicing.
