Instructions
- Preheat your oven to 200°C (400°F).

- Roast in the oven for about 30 minutes until soft and caramelized.
- In a large pot over medium heat, add olive oil and sauté the diced onion until translucent (5-7 minutes). Add minced garlic and cook for an additional minute.
- Combine roasted tomatoes (with juices) into the pot along with chicken or vegetable broth; bring to a simmer.
