  • 2 tsp minced garlic (2 cloves)
  • 1/4 cup taco seasoning (2 packets)
  • 1/2 cup water
  • 1 14.5 oz. can fire-roasted diced tomatoes (undrained)
  • 1 4 oz. can green chilis
  • 1 15 oz. can black beans (drained and rinsed)
  • 18 corn tortillas
  • 6 cups shredded cheese (Monterey jack and cheddar blend works great)
  • 1 medium tomato (diced for garnish)
  • 1 bunch green onions (sliced for garnish)
  • sour cream (for serving)

Instructions

  1. Preheat oven to 350°F and coat a 9×13-inch casserole dish with non-stick spray.
  2. Brown ground beef with diced onion in a skillet over medium heat; add garlic later.
  3. Stir in taco seasoning and water; simmer for flavor melding.
  4. Add fire-roasted tomatoes, green chilis, and black beans; heat through.
  5. Layer corn tortillas in the baking dish, followed by meat mixture and cheese; repeat layers twice.
  6. Cover with foil and bake for 30-40 minutes until bubbly.
  7. Garnish with diced tomatoes and green onions; let sit for 10 minutes before slicing.
