Ingredients

  • 500 g fresh tomatoes (chopped) or 1 x 400 g tin of chopped tomatoes
  • 3 cloves garlic (minced)
  • 1 onion (finely chopped)
  • 500 ml chicken or vegetable stock
  • 150 ml double cream
  • 2 tbsp olive oil
  • Fresh basil for garnish

Instructions

  1. In a high-sided skillet, heat olive oil over medium heat until shimmering.
  2. Add chopped onion and minced garlic; sauté until soft and fragrant.
  3. Stir in chopped tomatoes and cook until slightly caramelized.
  4. Pour in stock and add spaghetti, ensuring pasta is submerged.
  5. Cook for about 15 minutes, stirring occasionally, until pasta is al dente.
  6. Gently mix in double cream and fresh basil; let sit for a couple of minutes to blend flavors.
  7. Serve hot, garnished with extra basil if desired.
