- 500 ml chicken or vegetable stock
- 150 ml double cream
- 2 tbsp olive oil
- Fresh basil for garnish
Instructions
- In a high-sided skillet, heat olive oil over medium heat until shimmering.
- Add chopped onion and minced garlic; sauté until soft and fragrant.
- Stir in chopped tomatoes and cook until slightly caramelized.
- Pour in stock and add spaghetti, ensuring pasta is submerged.
- Cook for about 15 minutes, stirring occasionally, until pasta is al dente.
- Gently mix in double cream and fresh basil; let sit for a couple of minutes to blend flavors.
- Serve hot, garnished with extra basil if desired.
