- 250 g dried red lentils
- 1 tin of chopped tomatoes
- 2–3 large baking potatoes
Instructions
- Preheat the oven to 180°C (350°F).
- Sauté diced onion and carrots in olive oil for about 4-5 minutes until softened.
- Add minced garlic and corn flour; cook for another 1-2 minutes.
- Combine lentils, chopped tomatoes, vegetable stock, and spices; bring to a boil, then simmer for about 15 minutes until lentils are tender.
- Thinly slice the potatoes and layer them over the lentil mixture in a baking dish.
- Drizzle with olive oil, season with pepper, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 20 minutes until golden brown.
