Ingredients
- 95 g plain flour
- 2 tablespoons cocoa powder
- 1 teaspoon baking powder
- 225 g dark chocolate (chopped)
- 56 g butter
- 2 eggs
- 100 g caster sugar
- 90 g Demerara sugar
- 1 teaspoon vanilla extract
- 85 g chocolate chips
Instructions
- Preheat your oven to 160ºC (320ºF) using a fan setting or 170ºC (338ºF) for conventional.
- In a heatproof bowl, melt the chopped dark chocolate and butter over simmering water; stir in vanilla once melted.
- Whisk together the eggs and sugars in another bowl until light and fluffy.
- Sift flour, cocoa powder, baking powder, and salt in a separate bowl; fold in chocolate chips.
- Gradually combine the melted chocolate mixture with the egg mixture, then gently fold in dry ingredients until just combined.
- Scoop tablespoons of batter onto a lined baking tray, spacing apart. Bake for 12-14 minutes until tops are crackly.
- Cool on the tray for about 10 minutes before transferring to a wire rack.
