  • 12 oz rigatoni pasta
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • ½ cup chicken broth
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Cook rigatoni in salted boiling water until al dente; reserve ½ cup pasta water before draining.
  2. In a large skillet, heat olive oil and sear chicken pieces seasoned with salt and pepper until golden brown. Remove and set aside.
  3. Melt butter in the same skillet, sauté minced garlic briefly, then add chicken broth and simmer.
  4. Stir in heavy cream and Parmesan until smooth; adjust with reserved pasta water as needed.
  5. Return chicken to the skillet with rigatoni; toss to coat in sauce and simmer briefly.
  6. Garnish with parsley and serve warm.
