- 2 tablespoons tomato paste
- 1 can (14 oz) crushed tomatoes
- 1 cup heavy cream or coconut milk
- 1 teaspoon sugar (optional, balances acidity)
- Salt and pepper to taste
- ¼ cup chopped cilantro (for garnish)
- 1 tablespoon lemon juice (for finishing)
Instructions
- Start by combining Greek yogurt, lemon juice, ginger-garlic paste, turmeric powder, garam masala, ground cumin, ground coriander, smoked paprika, chili powder, and salt in a mixing bowl.
- Add the chicken pieces to this marinade. Cover and refrigerate for at least 60 minutes (or overnight for best results).
- In a skillet over medium heat, add oil and butter or ghee. Once melted, sauté the chopped onion until translucent. Stir in minced garlic and grated ginger; cook until fragrant.
- Add ground cumin, ground coriander, garam masala, turmeric, smoked paprika, chili powder, tomato paste, and crushed tomatoes. Let simmer for about 10 minutes.
- Remove marinated chicken from the refrigerator and add it to the skillet with the sauce. Cook until chicken is fully cooked through (about 15–20 minutes).
- Stir in heavy cream or coconut milk, adjusting seasoning with sugar (if using), salt, and pepper to taste. Let simmer for an additional 5 minutes.
- Garnish your dish with chopped cilantro and a squeeze of lemon juice before serving.
