  • 2 lemons (juiced)
  • 1 tablespoon honey
  • 1 garlic clove (minced)
  • 1 medium red onion (diced)
  • 1 English cucumber (diced)
  • 4 Roma tomatoes (chopped)
  • 1 cup feta cheese (crumbled)
  • 1 cup kalamata olives (pitted)

Instructions

  1. Cook quinoa: In a saucepan, combine quinoa with 2 cups of water and a pinch of salt. Simmer for 12-15 minutes until tender. Drain if necessary and set aside.

  3. Marinate chicken: Coat chicken breasts with one-third of the marinade; reserve the remainder for dressing.
  4. Grill chicken: Heat a grill pan over medium-high heat and grill chicken for 6–8 minutes per side until internal temperature reaches 165°F.
  5. Assemble bowls: Divide quinoa among serving bowls; top with grilled chicken, cucumber, tomatoes, red onion, feta cheese, and kalamata olives.
