  • 2 teaspoons vanilla extract
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together pumpkin puree, maple syrup or honey, Greek yogurt, vegetable oil, egg, and vanilla until smooth.
  3. In another bowl, combine whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Grease a muffin pan or line it with muffin liners. Divide the batter evenly into each muffin cup.
  6. Bake for about 18 minutes or until a toothpick inserted comes out clean.
  7. Let cool slightly before transferring to a wire rack.
