Ingredients

Scale
  • 2.5 lbs Yukon Gold potatoes
  • 4 tablespoons unsalted butter
  • 1 large yellow onion
  • 56 cloves garlic
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups whole milk
  • 1/2 cup heavy cream (optional)
  • 2 cups shredded sharp cheddar cheese
  • Fresh parsley, chives, thyme

Instructions

  1. Peel and cube the Yukon Gold potatoes into ½-inch pieces. Rinse under cold water to remove excess starch.
  2. In a large pot, melt the butter over medium heat. Sauté the chopped onion until translucent (about 5-7 minutes).
  3. Add minced garlic and cook for another minute until fragrant.
  4. Stir in flour and cook for 1-2 minutes to create a roux.
  5. Gradually whisk in the broth until smooth; bring to a simmer.
  6. Add potato cubes and cover; cook until tender (15-20 minutes).
  7. Blend half of the soup until smooth, then return to the pot.
  8. Lower heat; stir in milk, cream, herbs, and cheese until melted.
  9. Season with salt and pepper to taste before serving.
