  • 2 cups chicken broth
  • ½ cup BBQ sauce
  • ¼ cup honey
  • 1 cup mixed vegetables (frozen or fresh)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt and pepper, to taste

Instructions

  1. 1. Heat a large skillet over medium heat. Season chicken with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. 2. Add oil to the pan and sear the chicken for 3-4 minutes on each side until golden brown. Remove from the pan.
  3. 3. Toast uncooked rice in the same pan for 1-2 minutes while stirring.
  4. 4. Pour in chicken broth, BBQ sauce, and honey; return the seared chicken to the pan.
  5. 5. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes.
  6. 6. Add mixed vegetables on top; cover and cook for another 5 minutes until rice is tender.
  7. 7. Let sit for 5 minutes before fluffing rice; garnish with green onions or parsley.
