  • 1 cup dried red kidney beans (soaked overnight)
  • 4 vegan sausages (sliced)
  • 1 medium onion (diced)
  • 2 stalks celery (diced)
  • 1 medium green bell pepper (diced)
  • 2 tablespoons Cajun seasoning
  • 5 cups vegetable stock
  • 3 cloves garlic (chopped)
  • 1 cup long white grain rice

Instructions

  1. Heat oil in a large pot and brown the sliced vegan sausages.
  2. Add the diced onion, celery, and bell pepper; cook until onions are translucent.
  3. Stir in Cajun seasoning, vegetable stock, bay leaves, thyme, and garlic.
  4. Drain soaked beans and add them to the pot; season with black pepper and optional vinegar.
  5. Cover and simmer on medium heat for 1 to 1½ hours until beans are soft, adding water if necessary.
  6. Cook rice as per package instructions while the stew simmers.
  7. Mash some beans against the pot side to thicken; simmer for an additional 5 minutes before serving over rice.
