  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • Fresh herbs (parsley or dill), salt & pepper to taste

Instructions

  1. Wash and slice cucumbers into thin rounds.
  2. Halve the cherry tomatoes and thinly slice the onion.
  3. In a mixing bowl, whisk together vinegar, olive oil, minced garlic, salt, pepper, and optional red pepper flakes.
  4. Combine the vegetables in a large bowl and pour the marinade over them. Toss gently to coat.
  5. Cover and refrigerate for at least 30 minutes; longer is better for flavor enhancement.
  6. Before serving, toss again to mix any settled marinade.
