Ingredients
- 2 cucumbers, thinly sliced
- 1 pint cherry or grape tomatoes, halved
- 1 small red or white onion, thinly sliced
- 1/4 cup apple cider vinegar or red wine vinegar
- 2 tbsp extra virgin olive oil
- 1 clove garlic, minced
- Fresh herbs (parsley or dill), salt & pepper to taste
Instructions
- Wash and slice cucumbers into thin rounds.
- Halve the cherry tomatoes and thinly slice the onion.
- In a mixing bowl, whisk together vinegar, olive oil, minced garlic, salt, pepper, and optional red pepper flakes.
- Combine the vegetables in a large bowl and pour the marinade over them. Toss gently to coat.
