  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 175 g (3/4 cup) softened butter
  • 150 g (3/4 cup) granulated sugar
  • 150 ml (2/3 cup) milk
  • 2 large eggs (lightly beaten)
  • 1 1/2 teaspoons vanilla extract

Instructions

  1. Preheat the oven to 170°C (325°F). Grease and line a loaf tin with parchment paper.
  2. Sift together flour, baking powder, and salt in one bowl.
  3. In a mixing bowl, cream softened butter with sugar until light and pale.
  4. Gradually add beaten eggs while mixing on low speed; add vanilla extract.
  5. Alternate adding half of the milk and flour mixture, then fold in the remaining ingredients until just combined.
  6. Pour batter into the prepared loaf tin and level the top with a spatula.
  7. Bake for 1 to 1 hour and 5 minutes or until a skewer inserted comes out clean.
  8. Cool briefly in the tin before transferring to a cooling rack.
