Ingredients
- 1/2 cup creamy almond butter
- 1/4 cup maple syrup
- 1 1/4 cups oat flour
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp ground ginger
- 1/2 cup shredded carrots
- 1/2 cup white chocolate chips (melted with 1 tbsp coconut oil)

Instructions
- In a large mixing bowl, combine maple syrup, almond butter, cinnamon, and nutmeg. Mix until fully combined.
- Add oat flour and shredded carrots to the mixture and stir until well incorporated.
- Use a cookie scoop or tablespoon to form the dough into balls and place them on a lined baking sheet. Freeze while preparing the chocolate.
- Melt white chocolate with coconut oil in the microwave in 30-second increments until smooth.
- Dip each ball into melted white chocolate and place back on the baking sheet. Freeze for 1-3 minutes before drizzling more chocolate on top and adding walnuts or cinnamon.
