  • 1/2 cup creamy almond butter
  • 1/4 cup maple syrup
  • 1 1/4 cups oat flour
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground ginger
  • 1/2 cup shredded carrots
  • 1/2 cup white chocolate chips (melted with 1 tbsp coconut oil)

Instructions

  1. In a large mixing bowl, combine maple syrup, almond butter, cinnamon, and nutmeg. Mix until fully combined.
  2. Add oat flour and shredded carrots to the mixture and stir until well incorporated.
  3. Use a cookie scoop or tablespoon to form the dough into balls and place them on a lined baking sheet. Freeze while preparing the chocolate.
  4. Melt white chocolate with coconut oil in the microwave in 30-second increments until smooth.
  5. Dip each ball into melted white chocolate and place back on the baking sheet. Freeze for 1-3 minutes before drizzling more chocolate on top and adding walnuts or cinnamon.
  6. Freeze for an additional 15 minutes until firm.
