Ingredients
- 4 oz cream cheese (softened)
- 2 Tbsp powdered sugar
- 1/3 cup pumpkin puree
- 2 cups graham cracker crumbs
- 1/2 tsp pumpkin pie spice
- 1/2 tsp cinnamon
- 2 cups white chocolate chips
- 1–2 tsp coconut oil (optional)
Instructions
- In a mixing bowl, beat together cream cheese and powdered sugar until light and creamy.
- Mix in pumpkin puree, one cup of graham cracker crumbs, pumpkin pie spice, and cinnamon until fully combined. Add remaining graham cracker crumbs.
- Cover and chill dough for at least 30 minutes.
- Line a baking sheet with parchment paper. Scoop out tablespoon-sized portions of dough and place on the sheet. Refrigerate again for at least 30 minutes.
- Melt white chocolate chips in a microwave-safe bowl, stirring until smooth.
- Dip each chilled pumpkin ball into melted chocolate, tapping off excess before placing back on the parchment-lined sheet.
- Drizzle any leftover chocolate over the truffles and sprinkle with decorations if desired.
- Chill for an additional 20-30 minutes until set before serving.
