  • 20 frozen dumplings (chicken or pork)
  • 5 cups chopped bok choy
  • 1/2 cup full-fat coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons red curry paste
  • 2 teaspoons minced fresh garlic
  • 1 teaspoon minced fresh ginger
  • 1 tablespoon rice vinegar
  • 2 teaspoons toasted sesame oil
  • 1/2 cup water
  • 3 tablespoons chopped cilantro for garnish
  • 1/4 cup thinly sliced green onions for garnish
  • 2 teaspoons toasted sesame seeds for garnish
  • Chili crunch oil (optional)

Instructions

  1. In a mixing bowl, whisk together garlic, ginger, soy sauce, rice vinegar, sesame oil, red curry paste, coconut milk, and water.
  2. In a large pan over medium heat, sauté bok choy until wilted (about 3–5 minutes).
  3. Arrange frozen dumplings on top of the bok choy.
  4. Pour the sauce evenly over the dumplings and bok choy.
  5. Cover and simmer for about 15 minutes until dumplings are cooked through.
  6. Garnish with cilantro, green onions, sesame seeds, and chili oil if desired.
